Taco Soup is bold, comforting, easy to customize and always a family favorite! Ground beef and black beans fill every serving with plenty of protein while veggies offer some nutrients. This one pot soup recipe checks all the right boxes!

Taco soup is one of those recipes that’s great for cleaning out your fridge/pantry! Some of my most favorite recipes are the ones where you can just toss a bunch of stuff into a pot and call it dinner.

It also helps that my family is obsessed with this taco soup recipe. I love serving it, because it’s a great way to sneak protein and nutrients into the mouths of even the most selective eaters!

Flavorful, easy, versatile, family friendly… This beef taco soup seriously satisfies.

  • Filling – This easy taco soup can stand on its own without a side dish. The black beans and ground beef pack it with protein and make it so filling!
  • Flavorful – You may be full from just one serving of taco soup — however, it’s so flavorful you’ll go back for seconds anyways!
  • One pot – Less clean-up is always a HUGE win in my kitchen. This soup recipe is easily prepared in just one pot.
  • Budget-friendly – You won’t be breaking the bank to make this taco soup! Check out the ingredients below and you’ll see that they’re all nice and inexpensive.

Taco Soup Ingredients

  • Ground Beef – I like to use lean ground beef since it doesn’t render as much fat when cooking. If you use higher fat beef, you may want to drain excess fat after browning.
  • Black Beans – Make sure they’re thoroughly drained and rinsed before adding to the pot. Any kind of beans will work here!
  • Beef Broth – Low-sodium beef broth is preferred. If you use regular beef broth, you may want to omit the additional sprinkle of salt.
  • Salsa – Use your favorite brand of salsa (feel free to make it spicy)! Or, go the extra mile by using Homemade Salsa.
  • Veggies – I love using a medley of onions, corn, and bell peppers in this recipe, but feel free to experiment and add some extras from the fridge.
  • Seasonings – All you need is a sprinkle of salt and some taco seasoning to create the very best flavor!

How to make Taco Soup

Take a quick look at how I make the BEST taco soup recipe! Scroll to the bottom of this page for more detailed instructions and ingredients.

  • Add the beef, onions, and peppers to a pot over medium heat.
  • Once the beef is cooked, stir in the remaining ingredients and cook over medium heat for about 15 minutes. Stir often.

Taco Soup Variations and Substitutions

  • Make it creamy: When I’m serving this to my kids, I stir in some heavy cream to cool it off and reduce the spice.
  • Thicken it: You can stir in some tomato sauce or crushed tomatoes for a thicker soup.
  • Add in additional veggies: Mushrooms, peppers, spinach, or whatever you think you’d like to eat in your taco soup!
  • Add rice: Add in some quick rice and simmer for 5-10 minutes, or long grain rice and simmer 20-30 minutes until tender for a thicker soup.
  • Top it up: For me, this soup is all about the toppings, but toppings are optional and additional ingredients. Try cheddar cheese, sour cream, avocado, fresh tomato and lime wedges.
  • Make it with chicken instead: Add all of the ingredients to a large pot and throw in two whole, raw chicken breasts. Simmer over medium-low heat until chicken is tender. Remove chicken breasts, shred, and add back into the soup to serve.

How to store this easy Taco Soup

Once it’s cooled to room temperature, transfer taco soup to an airtight container and store it in the fridge for 3-4 days. Reheat for 30 seconds at a time in the microwave, stirring each time it stops, until warmed all the way through.

Can I freeze Taco Soup?

Sure thing! Allow the soup to fully cool before storing it in a freezer-safe container. I recommend pouring it into a zip-lock bag and laying it flat on a baking sheet to freeze, that way it optimizes how much room you have in your freezer.

Freeze for up to 3 months and let it slowly defrost in the fridge prior to reheating.

Can I make Crockpot Taco Soup?

Yes! This easy Taco Soup is also a perfect Crockpot soup recipe!

  1. Brown your ground beef in a skillet, then add to a 3-4 quart slow cooker.
  2. Add the remaining ingredients, and cook on low for 3-4 hours (you can leave it longer and it won’t hurt anything, or on high for 1.5-2 hours.
  3. Serve.

Can I make it in the Instant Pot?

You sure can.

  1. Brown your ground beef in the Instant Pot on sauté.
  2. Add your broth and scrape the bottom to remove any bits.
  3. Add the remaining ingredients and select pressure cook on high for 2 minutes.
  4. When the cook time is over, let the pressure release naturally for at least 5-10 minutes (just because soup can be very steamy), then open the valve and remove the lid to serve.

  • 1 lb lean ground beef
  • 1 red bell pepper (finely chopped)
  • ½ onion (finely chopped)
  • 2 ½ cups low sodium beef broth
  • 540 ml canned black beans drained and rinsed (19oz)
  • 341 ml canned sweet corn with juice (12oz)
  • 1 cup mild tomato salsa
  • 1 teaspoon low sodium taco seasoning

Instructions

What’s the Difference Between a Crock Pot and a Slow Cooker?

Depending on who you ask, “crock pot” and “slow cooker” are interchangeable terms. Both make use of moist heat to cook food over longer periods of time. However, Crock-Pot® is actually a brand name, as well as a specific style of slow cooker!

So, yes, a crock pot is a kind of slow cooker. But not every slow cooker is a crock pot. The key differences are in the design:

  • A crock pot is designed with a stoneware pot or “crock” that’s surrounded by a heating element. These generally come with two settings, low and high.
  • A slow cooker is a similar appliance that has a pot that sits on top of a heating element. Slow cookers tend to have multiple settings, compared to only two.

Whether you’re the proud owner of a crock pot or another type of slow cooker, both operate similarly and are perfect for these slow cooker chicken breast recipes!

Crockpot Chicken Breast Recipes Are Great for Meal Prep! 

Let’s take a moment to appreciate the endless possibilities of a crock pot. These crock pot chicken recipes are everything I look for when it comes to delicious dinner ideas that you can make ahead. Here are some ways you can maximize your weekly meal prep with these slow cooker chicken recipes:

  • Organize the ingredients ahead of time. Zip-top bags are perfect for this! Organize the ingredients you need over a weekend, and have dinners ready to go for the week. Where the recipe permits, you can even combine the ingredients in bags ahead of time and then empty the contents into the crock pot to cook.
  • Cook, store, and freeze. Most crock pot chicken recipes are excellent for leftovers and freezing. If you’ve cooked up a big batch of something delicious, portion it into individual servings to store and freeze for easy grab-and-reheat meals all week long.
  • Take advantage of the extra time. Crock pots are an excellent way to save time, with a hot meal ready and waiting at the end of the day. Nothing beats coming home to a house that smells amazing and a cozy chicken dinner that cooks itself. Enjoy the extra moments spent with family and friends!

Crockpot Chicken Breast Recipe FAQs

Is it safe to leave the crock pot on when I’m not home?

Slow cookers were designed to be left on while you’re out! It’s perfectly safe to switch on your crock pot in the morning and leave for the day, comparable to leaving a light bulb on.

Can I cook frozen chicken in the crock pot?

It’s a major no-no to cook frozen meat in the crock pot. Frozen meat (especially chicken) thawed in the slow cooker can stay at unsafe temperatures for extended lengths of time. This, combined with the moist heat, makes it a breeding ground for bacteria and food-borne illnesses! So always, always thaw the chicken ahead of cooking it.

Is it better to cook chicken on high or low in the crockpot?

For best results, boneless and skinless chicken in the crock pot should be cooked on low. Cuts like chicken breasts, when cooked on high, can dry out even if you check them early on. So for consistent results, I’d recommend that most recipes be cooked low and slow.

What is the best cut of meat for crock pot pulled pork?

I always recommend using either boneless pork loin or pork shoulder for pulled pork! See my reasons for each down below.

The best meat for pulled pork really depends on your preferences: sometimes I prefer leaner, boneless cuts of meat (if I don’t want my pulled pork too fatty), and other times I reach for higher fat cuts for more juiciness.

Either way this slow cooker pulled pork recipe is going to be tender, juicy and delicious after a long, slow cooker!

Using Pork Loin for pulled pork:

It’s an easy-to-cook, fairly lean cut of meat so you don’t have to deal with any bones. This way, I get the most bang for my buck, I don’t have to do a lot of trimming, and it’s just plain delicious.

Pork loin also tends to go on sale often for a great price, and I will pick up a few to store in the freezer until a craving for this slow cooker pulled pork hits.

Since we are slow cooking our shredded pork, the loin stays moist during the long cook time.

Using Pork Shoulder for Crockpot Pulled Pork:

Pork shoulder also gives great results! The pork shoulder is high in fat which will make a very juicy pulled pork and it is another great option.

Pork shoulder is a great option for the slow cooker as well as oven and smoked preparations as the fat ensures it doesn’t dry out.

The BEST Crock Pot Pulled Pork

This Crock Pot Pulled Pork recipe is so easy and so flavorful! It starts with a garlic herb rub and hangs out in the slow cooker until it’s fall apart tender.

Ingredients

  • 4 lb boneless pork loin or pork shoulder (trimmed if desired)
  • 1 cup apple juice (or soda)
  • 1 tablespoon seasoning salt
  • 1 tablespoon garlic powder
  • 1 tablespoon Italian seasoning
  • 1 teaspoon dried mustard
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper
  • 2 cups barbecue sauce as desired

Instructions

  • Place pork loin in a 4-6 quart crock pot and pour in apple juice.
  • Combine seasoning salt, garlic powder, Italian seasoning, mustard, onion powder and black pepper and sprinkle half over pork loin. Turn and sprinkle on the remaining half.
  • Cover and cook on low until fall apart tender — 8 to 10 hours. 
  • Shred with two forks, discarding excess fat. Toss in remaining juices and coat with barbecue sauce as desired. Serve on hamburger buns.

Ingredients and Substitutions:

Pork: I often use pork loin but it is leaner and will result in a leaner pulled pork. I don’t find that this is a problem because the slow cooker and juices keep the pork so moist that we don’t miss the extra fat. Pork shoulder is typically the best cut of meat for pulled pork because it is fatty, which makes it very tender when cooked. You choose which you prefer!
Apple juice: I love apples and pork, so this is my favorite liquid, but you can use broth, water or soda (Dr. Pepper or Root Beer are both delicious!).
Barbecue sauce: Choose your favorite barbecue sauce, or try my Homemade BBQ Sauce, this Easy Homemade Dr Pepper BBQ Sauce or this Homemade Dr Pepper BBQ Sauce.

It was high time for this Crockpot Shredded Chicken to join my family of easy meal prep recipes. It’s one of my favorite recipes when we’re short on time!

I’ve realized how important it is to have a collection or super practical, easy recipes for kitchen basics that will make your life a hundred times easier through the week.

Why we love this Slow Cooker Shredded Chicken:

  • It’s versatile: Having this crockpot shredded chicken prepped is a lifesaver and is so easy to stir into soups, pasta, make quick sandwiches or, hey, even add to a boxed pasta mix when times are really crazy! 😉
  • It’s great for making ahead: Easy meal prep makes these busy days much more manageable!
  • It’s customizable: you can easily use your favorite seasonings blends or spices to jazz it up! Try taco seasoning, Creole, Cajun, or something else!

Ingredients needed:

  • Chicken breasts: I prefer to use boneless skinless chicken breasts but you could also use boneless skinless chicken thighs if you prefer. If you would like to use bone-in chicken, you’ll want to add a couple hours to the cook time.
  • Chicken broth: I always choose low sodium chicken broth so that I can add salt according to our tastes. If you are using a salted broth, you may want to reduce the amount of seasoning salt added.
  • Seasoning salt: seasoning salt is one of my favorite all-purpose seasonings — it packs a lot of flavor in one bottle! If you don’t have any, you can add salt, paprika, garlic powder and onion powder.
  • Italian seasoning: I love the herby flavor of Italian seasoning and I think it goes well with most flavors. Feel free to reduce or omit according to your tastes and your uses.
  • Black pepper: adds a bit of heat to balance out the flavors.

How to make Crockpot Shredded Chicken:

Here are a few step by step photos to guide you! See the full recipe down in the recipe card.

  1. Add chicken to the bottom of the crockpot (I use my 2.5 quart when I am making 4-6 chicken breasts, and my 4 or 6 quart slow cooker when making more than that).
  2. Add broth and seasonings and give everything a stir.
  3. Cover and cook on low until tender and cooked through (roughly 3-4 hours) — it may be cooked before it is fall apart tender, so don’t be afraid to let it cook for a couple extra hours on low so that it shreds easily.
  4. Open lid and shred in the juices, or shred on a cutting board and add back to the juices after shredding.

Slow Cooker Shredded Chicken FAQs

What size crockpot do I need?

The crockpot pictured here is a 2.5 quart casserole crock — it’s one of my favorites! It’s a great size for a family of 3-5. It works great for 4-6 chicken breasts.
If you’re looking to do a big batch, I recommend a 4-6 quart slow cooker.

Can I let it cook all day?

The answer is yes, but you might not want to. Overcooked chicken tends to be dry and unappetizing. The slow cooker is a forgiving environment but even so, 8 hours or more is a long time for chicken to cook.
If you want to let your chicken cook longer than the recipe calls for, I recommend choosing a smaller crockpot and filling it to the 2/3 point. A fuller crockpot will cook more slowly.

Why is my Crockpot Shredded Chicken tough?

It’s likely that it hasn’t cooked long enough to shred. While chicken breasts are often cooked through in just 2 hours on low, I like to let them cook a little longer if I plan to shred them so that they are fall-apart tender.

How do I keep chicken from drying out in the slow cooker?

Don’t overcook! It’s important to hit that sweet spot between “tough and hard to shred” and “dry and overcooked”. Thankfully, the crockpot is one of the best ways to get juicy chicken.

Is it better to cook chicken in the crockpot on low or high?

I think it is always better to cook on low if you can, but cooking on high is an option if you are pressed for time.

Do I need to cover the chicken with liquid?

No! The liquid in the crockpot creates steam that will cook the chicken and keep it moist even if it is not covered in liquid.

Can I freeze leftover shredded chicken?

Absolutely! Leftover cooked chicken can be frozen in an airtight container or zip-top freezer bag for up to 6 months.

Tips for making this easy Crockpot Shredded Chicken:

  • Don’t overcook. I know it can be tempting to leave the chicken in for a long time as you would think it would end up more tender, but that’s not always the case. With slow cooker chicken recipes, you really want to be sure you hit the sweet spot between “just enough” and “dry and unappetizing”.
  • Use boneless chicken breasts or boneless chicken thighs. Avoid having to deal with skin and bones to make this crockpot shredded chicken recipe super simple. Chicken thighs will have a little more fat (flavor!) and more moisture. Chicken breasts are leaner, but also don’t pack quite the same amount of flavor as thighs. You can use one or the other or a combination! I use chicken breasts because they always turn out incredibly moist and it’s easy to add flavor 🙂
  • Know your slow cooker. When cooking 4 chicken breasts like this recipe calls for, I love using my 2.5 quart crockpot — it’s the perfect size and heats up quickly. If you’re doing more chicken than that, you’ll likely want to use a 4-6 quart crockpot. Note that if your crockpot is very full, it will take longer to heat and cook. The size affects the cooking time!
  • Keep the seasoning simple. You don’t want to end up with a week’s worth of single-purpose chicken (unless you do, I guess!), so by keeping the seasoning on this slow cooker shredded chicken basic, you can use it in a multitude of ways. It doesn’t scream “Mexican!” or “Italian!” or “curry!”.

How to shred chicken:

I know a lot of people like to make easy shredded chicken with a hand mixer or stand mixer because it shreds quickly and easily.

This is a great way to do it, but honestly? I prefer a couple of forks.

It really doesn’t take that long, and I’m all about using the least amount of dishes as possible. I really dislike washing big pots and bowls so I avoid using extra at all costs! You pick the easiest way for you.

After simmering away low and slow, this slow cooker shredded chicken comes together (or rather, apart! Lol) with little effort. No need to pull out the big guns 😉

So now that we have all of this wonderful, flavorful, moist slow cooker shredded chicken, the real question is what to make with shredded chicken?

I love having a bunch on hand in the fridge because it is so versatile and makes meal planning so much easier to manage.

This is an easy recipe to customize! Try one of these delicious recipes to make it your own:

  • Skip the Italian seasoning and add 2-3 teaspoons taco seasoning and some mild salsa for shredded chicken tacos or taco salad! (Go crazy and add a can of green chiles if you like!)
  • Stir in some barbecue sauce and make BBQ Chicken sandwiches
  • Stir in some buffalo sauce and serve it over Air Fryer Baked Potatoes or with nachos

Ingredients

  • 4 boneless skinless chicken breasts (about 2 lb)
  • ¾ cup low sodium chicken broth
  • 1 teaspoon seasoning salt (I use Lawry’s)
  • ¾ teaspoon Italian seasoning
  • ¼ teaspoon black pepper

Instructions

  • Place chicken breasts in 2.5-4 quart crockpot. Pour in chicken broth and sprinkle with seasonings.
  • Cover and cook on low for 3-4 hours or high for 2-3 hours, until chicken is cooked through (165 degrees F minimum) and fall apart tender.
  • Using two forks, gently pull and shred the chicken in the liquid (if your chicken has released a lot of liquid, you may want to remove some liquid before shredding, but save it in case you want to add more back in). 
  • Serve as desired or let cool slightly before refrigerating. Cooked chicken can be stored in the refrigerator, tightly sealed, for 3-4 days, or packaged and frozen for 3-4 months.

Notes

*The cook time in this recipe has been adjusted to 3-4 hours on low from the previous 6-7. I find that a lower cook time is sufficient when using 4 chicken breasts in a smaller crockpot. If you have a larger crockpot, it is very full, or you have large chicken breasts, you may still need to cook for 4-6 hours on low.

Slow Cooker Tomato Basil Chicken Ingredients:

  • Chicken breasts: we always use chicken breasts for this recipe but boneless, skinless chicken thighs would also work well. If you choose bone-in chicken the cook time will increase significantly.
  • Tomato pasta sauce: this is simply a tomato sauce that you would use on pasta with herbs and seasonings, i.e., a marinara or something similar. This is not tomato paste. Choose your favorite well-seasoned brand!
  • Diced tomatoes: If you don’t like the chunks of tomato you can sub this out with an additional cup of tomato pasta sauce.
  • Garlic and seasonings: I’ve kept things simple, but feel free to experiment if you prefer. Add some red pepper flakes if you like things spicy!
  • Cream: I recommend heavy cream or evaporated milk in this recipe. I find that they have the lowest chance of curdling when cooked with the acidic tomatoes. I do not recommend low fat cream or milk, but you are always welcome to try!
  • Corn starch: A little corn starch helps to thicken our sauce. You can swap this out with flour if you don’t have any.
  • Fresh basil: fresh basil can be hard to find in the cooler months. Basil pesto is my favorite swap because it adds more of that fresh flavor than dried basil.

How to make Creamy Tomato Basil Crockpot Chicken Breast:

  • Stir together sauce, tomatoes and herbs.
  • Whisk the corn starch into the cream.
  • Add the cream to the slow cooker and stir.
  • Add the uncooked chicken and cook until the internal temperature reaches 165 degrees F.

How long to cook chicken breasts in the crockpot?

Not overcooking slow cooker chicken breasts is the key to having juicy and flavorful chicken.

I usually recommend 3 hours on low — this might be a little less if your chicken breasts are small or a little more if your chicken breasts are large.

If you’re cooking on high, check the internal temperature at 2-2.5 hours and add time as needed.

Can I use half and half or milk?

Low fat dairy has more of a tendency to curdle.

For that reason, the addition of the tomatoes and the long cook time, I prefer not to take the chance. My exception is low fat evaporated milk, which I find works really well in slow cooker recipes.

You are always welcome to try it!

What kind of tomato pasta sauce do I need?

Choose your favorite brand of tomato-based pasta sauce, i.e., marinara sauce or something similar.

You’re looking for a relatively smooth and well-seasoned tomato sauce, rather than a can of plan crushed tomatoes.

Tips for making this slow cooker chicken recipe:

  • Don’t overcook it — I find 3 hours is plenty for the usual size of my chicken breasts. I recommend checking the temperature at 2.5 hours for smaller breasts, and 3 hours for larger breasts, and adding time as needed.
  • I made this recipe in a 4 quart slow cooker — if you want to double it, I suggest a 6 quart slow cooker (I have both, and use them for different things!).
  • I really, really love using slow cooker liners. I will gladly pay the 50 cents or whatever they cost to not have to wash that beast!
  • Please always, always check the temperature of your chicken with a meat thermometer before serving just to be safe! All slow cookers cook differently.

I faintly remember those days when I used to go to Olive Garden for the Zuppa Toscana (all you can eat soup and breadsticks? Sign me up!).

But life gets busier and we need all the easy meals around here!

Since having kids, I’ve learned to make and enjoy more of our favorite restaurant meals at home, including this creamy soup. 

This easy Crock Pot Zuppa Toscana Soup is as delicious as the original recipe, if not better!

It’s made with simple ingredients and minimal effort, so it’s perfect for a lazy weekend or prepping for the end of a busy day. 

This delicious copycat soup is one of our favorite things to dip large chunks of bread into in the fall!

Why we love this Slow Cooker Zuppa Toscana Soup:

  • The Italian sausage is loaded with herbs and spices, which cuts down on the extra ingredients required!
  • It’s got just the right amount of spice and sweetness (again, thanks Italian sausage!)
  • Aside from browning the meat, I can just dump it and go, which is perfect for busy weeknights.

Zuppa Toscana Ingredients:

  • Sausage: use mild or spicy Italian sausage meat without the casings.
  • Onion & Garlic: use freshly chopped onion and freshly minced garlic.
  • Broth: I always use a low-sodium chicken broth, as it adds a depth of flavor and allows me to control the salt content of the dish better.  
  • Potatoes: Russet or gold potatoes will work well here, but you can try other kinds of potatoes if you like. If you use smooth-skinned potatoes you can skip the peeling!
  • Salt & Pepper: simple seasonings of salt and black pepper will give this dish a great flavor. 
  • Red Pepper Flakes: a simple way to add some extra spice to this dish. 
  • Cream: Use heavy cream or 10-30% cream for the best creamy flavor and texture.

  1. Saute: Brown the sausage and onion in a pan.

How do you thicken Zuppa Toscana Soup?

Zuppa Toscana is meant to be a creamy broth but if you prefer it thicker, you can mash some of the potatoes or add a cornstarch slurry to it. Mash potatoes with a potato masher, or blend the soup a bit with an immersion blender.
For the slurry, whisk together 1 tablespoon of cornstarch and 1 tablespoon of cold water. Once the mixture is smooth, whisk small amounts into the soup until thickened to your liking. 

How do I store Zuppa Toscana Soup?

Store leftover Zuppa Toscana in an airtight container in the fridge for 3-4 days. Reheat it in the microwave or on the stovetop until piping hot.

Can you freeze Zuppa Toscana Soup?

Freeze this soup for up to 1 month. The texture of potatoes will change with freezing and defrosting, so if that is something that bothers you, I’d advise against it. To reheat it, simply thaw in the fridge overnight and warm on the stove or in the microwave.

Tips and Notes

  • Dutch Oven. You can make this Zuppa Toscana Soup in a Dutch oven or soup pot if you prefer. Take a look at my Zuppa Toscana Soup recipe for more information. 
  • Kale texture. We prefer the texture of kale with more bite, so we stir it in near the end of the cook time. If you want, you can always add it to the slow cooker at the beginning but it will be softer.

Crock pot Zuppa Toscana Soup Variations

  • Bacon. Lots of recipes for Zuppa Toscana include bacon, but I find it an unnecessary addition. If that’s your thing, feel free to cook some up in the same pan you fry your sausage and add it to the slow cooker (or save your crispy bacon to sprinkle on top to garnish).
  • Swap the kale. You can swap the kale for spinach if that’s what you have on hand, but spinach isn’t as tough as kale, so I would add it right before serving it. 
  • Cream. If you want to use a lighter dairy option, you can swap the heavy cream for evaporated milk. I don’t recommend low-fat milk, as it can curdle when added alone to hot liquid.
  • Change the meat. Swap the Italian sausage for ground beef or even ground turkey sausage, if preferred. Bear in mind that Italian sausage is heavily seasoned, so if you use another meat, you will want to add more seasonings yourself!
  • Add more veggies. Add more veggies to the soup for more nutrients and color. Sauté some peppers, mushrooms, or any other veggies with the onion and Italian sausage. Or you can add veggies with more structure, such as broccoli, cauliflower, or carrots, when you add the potatoes.
  • Low-carb. To make this soup a low-carb option, use cauliflower instead of potatoes.

Serving Suggestions

Ingredients

  • 375 grams Italian sausage meat without casings, mild or spicy (¾ lb)
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 3 cups low sodium chicken broth
  • lbs Russet or gold potatoes about 4 medium, peeled and diced
  • ¾ teaspoon salt
  • ¼ teaspoon black pepper

Crockpot Creamy Garlic Chicken features golden pan seared chicken breasts that get slow cooked to perfection in a garlicky cream sauce. It’s an easy recipe that’s great for those busier weeknights at home!

I’m pretty obsessed with slow cooker recipes – especially when it comes to crockpot chicken breasts! There’s just really no better way to accomplish fork tender chicken breasts than cooking them low and slow.

Before the chicken is added to the slow cooker in this easy recipe, it gets seared to golden perfection in a pan for just a few minutes to make it just that much more delicious!

Once it’s seared, you pretty much just toss everything into your Crockpot and let it do all the work for you. That’s the beauty of this Crockpot creamy garlic chicken recipe – the results are stunning with such little effort!

  • Chicken Breasts – You can swap these with boneless skinless chicken thighs if preferred.
  • Chicken Broth – Low-sodium broth is always my first choice. If you do use a regular broth, conduct a little taste test before sprinkling in any additional salt.
  • Heavy Cream – You can swap this with half and half, but you may not achieve the same thick and creamy results. If you need to thicken your sauce even more, you may need to stir in a cornstarch slurry.
  • Garlic – For the very best flavor, I recommend using fresh garlic cloves. The pre-minced alternative doesn’t lend the same bold fresh flavor.
  • Seasonings – Just a little salt, pepper, and parsley is all you need. You can sprinkle in some garlic powder if you really want to double down on that garlicky flavor!

How to make Crockpot Creamy Garlic Chicken

  • Season the chicken breasts with a little salt and pepper.
  • Mix together all of the sauce ingredients until combined.
  • Sear the chicken breasts on both sides until golden.
  • Add the chicken and sauce to a Crockpot. Cook on low for about 3 hours.

Variations and Substitutions

  • Make it tangy. Squeeze in some fresh lemon juice just before serving to brighten this dish up a bit!
  • You can use chicken thighs. Just make sure to check the internal temperature of the meat if you’re not sure! Both breasts and thighs should measure 165°F when fully cooked.
  • Thicken with cornstarch. If you want your cream sauce to be even thicker, you can stir together cornstarch and broth (or water) to make a slurry. Stir this into your sauce at the end to thicken it even more before serving.
  • A tomato-y twist. Add in some sun dried tomatoes, diced tomatoes, or a spoonful of tomato sauce or tomato paste.

How to store Crockpot Creamy Garlic Chicken

Store any leftovers you may have in an airtight container in the fridge for 3-4 days.

Add a splash of broth, cream or water and reheat for 30 seconds at a time in the microwave until warmed all the way through. You can also reheat on the stove top on low heat, covered.

Can I freeze Crockpot garlic chicken?

Sure thing! Let the chicken and sauce fully cool to room temperature, then transfer everything to a freezer-safe storage container. Store for up to 3 months and let it slowly thaw in the fridge prior to reheating.

Ingredients

  • 2 tablespoons oil
  • 4 boneless skinless chicken breasts (about 2 lbs)
  • salt and pepper
  • ¾ cup heavy whipping cream
  • ½ cup low sodium chicken broth
  • 1 tablespoon corn starch

Instructions

  • Heat oil in a large skillet over medium high heat.
  • Season chicken with salt and pepper and fry on each side until golden (you might need to do two batches if your pan is small), about 3-4 minutes per side.
  • Meanwhile, whisk together the cream, broth. corn starch, garlic, parsley, salt and pepper.
  • Place the chicken breasts into a 2.5-4 quart slow cooker and cook on low for about 3 hours (the cook time could be a little shorter or longer depending on how hot your slow cooker is) until an internal temperature of 165 degrees F is reached.
  • Serve with sauce.

  • Chicken: this recipe will easily work with twice the amount of boneless, skinless chicken thighs (or the same weight) without any recipe modifications. 
  • Cream: the sauce thickens nicely because heavy cream is used. If you choose to use a lighter cream, you may need to thicken it further. Light cream and milk is also more prone to curdling when cooked. 
  • Broth: I always choose low sodium or no salt added broth and then adjust the seasoning to our taste. If you are using salted broth, you may want to omit the salt and season to taste after cooking.

  • Steak – Sirloin is my favorite cut to use when making Mongolian beef. It’s relatively inexpensive and because we’re slow cooking it, we can get away with a leaner steak.
  • Soy Sauce – Low-sodium soy sauce is preferred. Tamari or coconut aminos will also get the job done.
  • Apricot Jam – This adds a subtle, natural touch of sweetness that just can’t be beat!
  • Hoisin Sauce – This dark, thick, rich sauce adds both saltiness and sweetness to the dish.
  • Cornstarch – This is used to thicken the sauce. Measure with care!
  • Veggies – Freshly sliced onions and bell peppers add just the right amount of crisp, fresh texture and flavor to this savory dish.
  • Garlic and ginger – For the best flavor and aroma, make sure both of these ingredients are fresh!

How to make Slow Cooker Mongolian Beef

  • Sear the steak in a skillet over high heat with a little oil.
  • Whisk together the apricot jam, soy sauce, hoisin, garlic, ginger and cornstarch.
  • Add the steak and veggies to the Crockpot.
  • Cover and cook on low for 2-3 hours.

Variations and Substitutions

  • Swap the steak: Sirloin is my favorite steak to use, but you can use really any other cut of steak that you prefer! The low and slow cooking process will turn any cut of steak into a tender masterpiece.
  • Add more vegetables: You can make this dinner as nutritious as you’d like! Feel free to toss in some broccoli, mushrooms, green beans, or whatever else sounds good to you.
  • Make it spicy: Sprinkle in some crushed red pepper flakes if you’re craving some heat. You can also mix in some chili garlic sauce to spice things up!
  • Add the peppers and onions whenever: If you don’t like your peppers and onions soft, feel free to just toss them in for the last hour – I put mine in for the whole cooking time. Do whatever works for you, and whatever your family prefers.

How to store Mongolian Beef

Once it cools to room temperature, you can store any leftovers you have in an airtight container in the fridge for 2-3 days. To reheat, add a splash of water or broth and pop it in the microwave for 30 seconds at a time, stirring each time it stops, until heated all the way through.

You can also add a splash of liquid and reheat it on the stovetop.

Can I freeze Mongolian beef?

Yes! Let cool fully to room temperature, then transfer everything to a freezer-safe airtight container. Freeze for up to 3 months

When you’re ready to enjoy the Mongolian beef, you can let it thaw in the fridge, or place it in a large skillet with a splash of water or broth. Cover and heat on low until warmed through.

Keep in mind that the vegetables will be quite soft after freezing, so you may want to leave them out until you are ready to serve.

Do I have to sear the steak first?

I personally prefer to sear the steak first so the juices don’t water down the sauce too much. However, you can save yourself a little effort and cleaning by just tossing the steak directly into the Crockpot (this is how I made this recipe originally!).

Yes! In fact, this is how this recipe was originally written. Now, I prefer to brown the meat so that the juices don’t water down the sauce quite as much. You can save yourself a dirty skillet if you toss the uncooked steak in with the sauce, though it will take about the same amount of time to cook.

  • Beans: Chili-style beans are my favorite to use. They’re tender and offer a nice flavor to the soup. In a pinch, you can swap them with a can of pinto beans or black beans, but you’ll want to add extra seasoning to compensate.
  • Salsa: Use your favorite jar that you already know you like the taste of. Feel free to pick a spicy salsa if you’d like some heat in this soup recipe!
  • Corn: Use a can of corn and do not drain it. The juice from the can adds sweet flavor to the broth.
  • Heavy cream: You can swap this with half and half if you’d like, just note that your soup may not be as creamy.
  • Taco seasoning: If you have any left over, save it and use it later to make my favorite One Pot Taco Mac!

How to make Crockpot Chicken Taco Soup

Here’s a sneak peek at how to make the best chicken taco soup in the Crockpot! Scroll down for more detailed instructions.

  • Add the chicken, corn, taco seasoning, water, salsa and beans to the Crockpot. Cook on low for 3-4 hours.
  • Once the chicken is cooked, remove it from the slow cooker and shred it with two forks.
  • Stir the chicken back into the Crockpot.
  • Stir the heavy cream into the soup. Taste and see if you need to add salt and pepper.

Variations and Substitutions

  • Add a little bit of spice: If you’re craving some heat, you can spice things up by sprinkling in some cayenne powder and/or red pepper flakes along with the taco seasoning. Spicy salsa also does the trick.
  • Swap the chicken: If you prefer chicken thighs, those can definitely be used instead! Just make sure they’re boneless and skinless. You can also use 1 pound of cooked, crumbled ground beef, or leftover taco meat!
  • You can use frozen corn: I prefer canned corn because the juices add a bit of sweetness to balance all of the more savory flavors. However, frozen corn works just fine if that’s what you have on hand.
  • Bump up the veg: this is a simple soup, but it’s easily customizable! If you need to clean out the fridge, feel free to add in some of what you need to use up. Frozen bagged veggies, chopped peppers, onions, spinach, kale, mushrooms, etc. Feel free to get creative!

How to store Crockpot Chicken Taco Soup

Once the soup cools to room temperature, transfer it to an airtight storage container and pop it in the fridge. It’ll stay good for about 3-4 days.

The quickest way to reheat it is in the microwave for 30 seconds at a time, stirring each time it stops, until warmed all the way through. You can also reheat it on medium-low on the stove top.

Can I freeze Chicken Taco Soup?

Yes! This taco soup freezes well for up to 3 months. To freeze it, let it first fully cool to room temperature. Then pour it into a freezer-safe zip-top bag. Lay it on a baking sheet and freeze for an hour or so, that way it freezes in a flat layer. This will help with storage space in your freezer!

When it comes time to reheat your soup, let it slowly thaw in the fridge first, and reheat in the microwave or on the stove top.

Serving suggestions:

When it comes time to serve your chicken taco soup, garnish each bowl with all your favorite toppings! Hot sauce, sour cream, sliced avocados, cilantro, jalapeños… The list can keep going on forever.

Slow Cooker Creamy Chicken Taco Soup

This Crockpot Chicken Taco Soup is made with just SIX ingredients in the slow cooker! With 5 minutes prep, it's an easy healthy dinner idea for busy weeknights.

Ingredients

  • 2 boneless skinless chicken breasts (about 1 lb)
  • 1 can chili-style beans (398 ml or 14oz)
  • 1 can corn (with juice, 341 ml or 12oz)
  • 1 ½ cup water
  • 1 cup jarred tomato salsa
  • 2 teaspoon taco seasoning
  • ½ cup heavy cream
  • salt and pepper to taste

Instructions

  • Place chicken breasts, beans (with sauce), corn (with juice), water, salsa and taco seasoning into a 3-4 quart slow cooker.
  • Cook on low for 3-4 hours (a little longer is fine here, but the chicken will be cooked in about 3 hours).
  • Remove chicken from the slow cooker and shred.
  • Stir chicken back into the slow cooker with the cream. Adjust seasonings to taste, then cover and heat through.

Ingredients and Substitutions:

  • Chicken: this recipe would also work well with boneless, skinless chicken thighs or cooked ground beef. It’s a great use for leftover taco meat too!
  • Beans: you can substitute with any kind of unflavored beans you like — black beans are a great swap! The chili-style beans add loads of flavor without needing extra seasoning. if you are using unseasoned beans, you may want to increase the taco seasoning before serving.
  • Corn: I like to use canned corn because the sweet juices balance out the spice here. You can also use frozen in a pinch.
  • Salsa: salsa adds lots of flavor, plus tomatoes, peppers and onions. You can also substitute chopped tomatoes plus chopped, sautéed peppers and onions, but you’ll want to add additional seasonings to compensate.
  • Cream: heavy cream is my preference because it doesn’t curdle when heated or combined with acidic foods. If using heavy cream, you can add it at the beginning of the cook time or at the end. If using light cream, stir it in only at the end.

Honestly, sometimes I wonder if the slow cooker is the most popular kitchen appliance.

It seems like there are at least 3 gifted at every bridal shower, and it’s one of the first small appliances that adorns the kitchen counter in a new place. They are just so incredibly versatile!

I really got into the habit of using mine all the time after we had kids. Kids have a habit of soaking up every minute of the free time you had before, right?!?

I know how hectic life can be, so I wanted to come up with a collection of dump and go slow cooker recipes — things that you can just throw in and leave. No remembering to brown the meat, cook the sauce, cook the pasta, etc.

Set it and forget it.

Why do we love the crockpot?

Because we love easy slow cooker recipes!

Cooking dinner in the crockpot means that we don’t have to stand over the stove for 30 minutes or an hour before dinner, prepping or chopping or stirring.

Slow Cooker meals are great for those days when you have more time to make dinner earlier in the day.

If the kids are in school and you have time to cook dinner at noon but not at 6pm, slow cooker dinners are for you.

If you work long days out of the house or you get back just in time to eat but not in time to prep, slow cooker recipes are for you.

If you love a slowly simmered soup or ultra moist roast, the slow cooker is for you.

What are the best things to cook in a slow cooker?

Our favorite things to cook in the slow cooker are things that we like extra juicy and tender and can benefit from a long cook time, or recipes with quite a bit of moisture, like these Crockpot Soup recipes.

These are the types of recipes you can start early in the day and let them cook for a long time without sacrificing flavor or texture.

We also love quick slow cooker recipes! These are dinners that we can put on and cook for 2-3 hours if we just need to step out of the house momentarily but will be back to eat dinner.

Recipes like this Slow Cooker Chicken Breast or Crockpot Mac and Cheese are good examples of quick slow cooker recipes we love!

Can you put raw meat in the slow cooker?

Absolutely!

It’s actually very rare that I will sear meat before adding to the slow cooker.

One of the biggest exceptions is ground meat, which really does need to be cooked in advance for the recipe to work well.

As far as different cuts of chicken, roasts, steaks, etc. — these can all be added as is!

There are times you may want to sear the meat first to build flavor, like in this Slow Cooker Pot Roast (which is delicious!), but it’s a step you can skip if you need.

My favorite crockpots and slow cookers!

  • Most often, I’m using a 2.5 quart casserole style crockpot that I love. It is wider and shallow, so you don’t have to stack everything up and it cooks more quickly. It is the perfect crockpot for someone cooking for 1-4 people and not doing large meals.
  • I also have a 4 quart crockpot that I use when I want to do a larger cut of meat, like a pot roast, or a big batch of soup. It’s everything I love about my 2.5 quart in a slightly bigger size.
  • I do have a 6 quart Hamilton Beach slow cooker that is great for cooking for a large group of people, but I do find it’s a little cooler and sometimes large chunks of meat have to be cut down into smaller pieces for it to cook by dinnertime.
